Healthy Berry Breakfast Crumble

This delicious Healthy Berry Breakfast Crumble is a sure way to get a great start to your day! I like to make a batch first thing on Monday morning while the kids are just waking up. I've also made it the night before if I'm feeling really organized! The only problem is... everyone loves it so much that I usually have to make it again on Wednesdays and Fridays! However, it's so quick and easy to make, that I really don't mind making it again and again!

This recipe is an adaptation of a recipe she shared in an instagram story.


I almost didn't get a picture of the full thing before half of it disappeared! Yes, it's that good! Plus, you'll feel like a granola-loving flower child every time you make it. Packed full of whole food goodness and a little sprinkle of chocolate chips, it's an almost-dessert-like breakfast you can indulge in and feel confident about, knowing you and your family are getting off to a healthy start!


🖤 Healthy Berry Breakfast Crumble ðŸ–¤

Ingredients:

Base layer:

  • 3-4 Cups of berries (fresh or frozen)
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1 tsp vanilla extract
  • 1 Tbsp maple syrup
Crumble:
  • 2 1/2 Cups old-fashioned oats
  • 1/2 Cup oat flour
  • 1/2 Cup almond flour
  • 3 Tbsp chia seeds
  • 1/4 Cup ground flaxseed
  • 1/4 Cup hemp hearts
  • 2 Tbsp unsweetened shredded coconut
  • 1 tsp ground cinnamon
  • 1/8 tsp salt
  • 3/4 Cup unsweetened apple sauce
  • 1/4 Cup pure maple syrup
  • Optional: 2-3 Tbsp chocolate chips
Directions:
  1. Preheat the oven to 375°F. In a 9x13-inch baking dish, spread the berries evenly on the bottom of the dish. If using frozen berries, stick them in the oven while it's warming up to thaw.
  2. Using a fork or a potato masher, mash the berries well. Sprinkle the ground cinnamon, ground ginger, vanilla and maple syrup on the berry mash and stir to combine.
  3. In a large bowl, mix together the oats, flours, seeds and cinnamon. Pour in the applesauce and maple syrup and stir to combine well, ensuring the ingredients are evenly coated.
  4. Using a spoon or your hands, transfer the crumble mixture bit by bit on top of the berry mash. If desired, top with chocolate chips.
  5. Bake at 375°F for 25-30 minutes or until crumble turns a light golden brown. Serve warm!
