Chewy Goodness Granola Bars

This is the only healthy granola bar recipe you will ever need! Why? Because it is extremely versatile. You can add almost anything you want to these bars, keeping them nut-free like we did, or going nuts and adding as much as you'd like! See what I did there? I guess mom jokes are just as bad as dad jokes.

Anyway, back to the bars! They are quick, easy, chewy and delicious! You can make them with whatever you have on hand, and did I mention that this is a one-pot, no-bake recipe? Can't get any better in my opinion! As a busy mom of 3, I am always on the lookout for easy grab-and-go snacks that are packed full of goodness. My kids have no idea how healthy these bars are!

Basically, these bars have 3 main components. Honey, coconut oil, and 3 cups of whatever you want. It's that simple!

You can keep it basic by adding 3 cups of rolled oats, or you can add a limitless amount of ingredients as long as it adds up to 3 cups! Some other ingredient ideas are dried fruit, puffed quinoa, chopped nuts, chocolate chips... use your creativity and create a bar that your whole family will love!

I originally was going to name this recipe "Healthy Nut-Free Granola Bars", but really, they can be nutty if you want them to. Our recipe today is nut-free, so my kids can bring these along in their school lunch kits. I save on my grocery budget by making these at home, and I know the ingredients are whole, healthy, and safe for school! Now, how about that recipe?


🖤 CHEWY GOODNESS GRANOLA BARS ðŸ–¤

Yields aprox. 16 bars

Ingredients:

  • 1/4 cup + 2 Tbsp honey
  • 2 Tbsp coconut oil
  • 1 tsp vanilla extract
  • 1/4 tsp ground cinnamon
  • 3 cups of whatever!
For this recipe, our 3 cups of goodness included:
  • 2 cups rolled oats
  • 1/4 cup oat flour
  • 1/4 cup hemp seeds
  • 2 Tbsp unsweetened shredded coconut
  • 2 Tbsp pumpkin seeds
  • 2 Tbsp chia seeds
  • 2 Tbsp puffed brown rice
  • 1/8 tsp sea salt
  • topped with a drizzle of melted dark chocolate
Directions:
  1. In a medium saucepan, melt honey and coconut oil together over medium-high heat until mixture begins to darken, about 3-5 minutes. Remove from heat immediately.
  2. If using, add vanilla extract and cinnamon to the saucepan, followed by all remaining ingredients. Stir really well to ensure the mixture is completely coated.
  3. Line a small baking sheet with parchment paper. Press granola mixture onto the baking sheet and refrigerate for 5-10 minutes.
  4. If using, drizzle with melted chocolate and return to fridge.
  5. Once the granola and chocolate have cooled and set, cut into bars. Keep bars refrigerated in a sealed container. Enjoy!
