Fudgy Sweet Potato Brownies

Sweet Potatoes in a brownie? You've gotta try this! I'm sure you've noticed that at Coffee, Cookies + Kale, we are BIG chocolate fans! So when our friend sent us this recipe claiming it was the best healthy brownie she had tasted, we knew we had to investigate. :P

If you like our Black Bean Brownie recipe, you will LOVE these too. They are incredibly moist, fudgy and extremely chocolatey. What more could you want in a brownie!? Chocolate Covered Katie is always coming up with tasty treats & this is no exception. 

Since we don't have any food allergies or restrictions in our house, I modified this a bit from the original recipe. If you are looking for a gluten free, sugar free, or nut free recipe, click here for modification ideas.

Our goal is to try this recipe with some sugar substitutes in the future, but because we loved it soooo much, we thought we'd share this one with you for now. Enjoy this delicious-ness!! 🖤 Fudgy Sweet Potato Brownies ðŸ–¤

Yields 12 -16 brownies

Ingredients:

  • 3/4 cup sweet potato puree (learn how to make some here)
  • 1 cup peanut
  • 1 tsp pure vanilla extract
  • 2 Tbsp butter, melted
  • 1/4 cup + 2 tbsp flour
  • 1/2 cup chocolate chips
  • 2/3 cup sugar
  • 1/4 cup + 2 tbsp cocoa powder
  • 1 1/2 tsp baking soda
  • 1/8 tsp salt
Directions:
  1. Preheat oven to 325 F. 
  2. Line an 8-inch pan with parchment paper.
  3.  Gently heat peanut butter until it's easily stir-able. 
  4. Whisk peanut butter together with the sweet potato, butter and vanilla extract in a large bowl.
  5. In a separate bowl, stir together the remaining ingredients. 
  6. Pour the dry ingredients into the wet and mix.
  7. Spread mixture into prepared pan. Use a second sheet of parchment to press it down evenly. 
  8. Bake on the centre rack for 22 minutes. (It will look a little undercooked, but it don't worry, it firms up as it cools)
  9. Place into fridge for a couple hours to get nice and fudgy (or enjoy right away if you can't wait!)
