Baked Berry Nice Cream Crumble

We are so excited to introduce to you not one, but TWO delicious recipes today in our Baked Berry Nice Cream Crumble! Drool.


The Berry Nice Cream is a recipe in itself, and one that my children go crazy for! There consistency is amazing, and it's like eating ice cream that's healthy for you! But would you ever think to bake it? Well we did! And you should too!


Introducing our incredibly delicious crumble recipe. Honestly, it may be one of my favourite recipes yet, and I think there will be some fun variations coming your way in the future!

🖤 Baked Berry Nice Cream Crumble 🖤

Ingredients:

Crumble:

  • 3/4 Cup rolled oats
  • 2 Cups shredded, unsweetened coconut
  • 1/2 tsp ground cinnamon
  • pinch of sea salt
  • 3/4 Cup maple syrup (can sub date paste)

Berry Nice Cream:
  • 1 Cup frozen strawberries
  • 1/2 Cup frozen raspberries
  • 1/2 Cup frozen blueberries
  • 2 chia "eggs" (read directions)
  • 1 tsp lemon juice
  • 2 Tbsp maple syrup (optional)
Directions:
  1. Preheat oven to 350°F and line a loaf pan with parchment paper. (Yes! Loaf pan!)
  2. Make your chia eggs: scoop 2 Tbsp of chia seeds into a small glass bowl, and pour 6 Tbsp of very warm water over them. Give them a little stir and set aside for 5-10 minutes until thickened.
  3. In a large mixing bowl, stir together all crumble ingredients. Press half of the crumble mixture into your lined loaf pan.
  4. Once your chia eggs are ready, pour all the Berry Nice Cream ingredients into a high powered blender or food processor and blend until you create an "ice-cream"-like consistency. You may need to pulse and tamper your mixture to ensure all the frozen berries are blended properly.
  5. Pour the Berry Nice Cream mixture on top of the crumble, and smooth.
  6. Press the remaining half of the crumble mixture on top, and bake for 40-45 minutes, or until the top is golden brown.
  7. Let sit for 30 minutes before cutting and serving. Enjoy!
