Peanut Butter + Chocolate Puffed Rice Squares

To kick things off for 2019, we've got our delicious, quick + easy Peanut Butter + Chocolate Puffed Rice Squares for you! 🖤 Peanut Butter + Chocolate Puffed Rice Squares 🖤

Ingredients:

Base:

  • 2 Tbsp coconut oil
  • 1/2 Cup peanut butter
  • 1/2 Cup maple syrup
  • 1 tsp pure vanilla extract
  • 1/8 tsp sea salt
  • 2 Cups puffed brown rice
  • 1 Cup rolled oats
Chocolate Topping:
  • 1/2 Cup dark chocolate chips
  • 1 Tbsp coconut oil


Directions:

Base:
  1. In a medium saucepan, melt together coconut oil, peanut butter, maple syrup, vanilla extract and sea salt over low heat and stir until combined.
  2. Stir in puffed rice and oats. Mix well.
  3. Press mixture into a 9x13 inch pan lined with parchment paper.
Chocolate Topping:
  1. In a small saucepan, melt together chocolate chips and coconut oil and mix together.
  2. Pour over puffed rice base, and smooth.
  3. Cool in the fridge until hardened, approx. one hour. Enjoy!





Tips:

🖤 You can sub peanut butter for almond butter.
🖤 You can sub maple syrup for honey.
