Chocolate Coconut Cashew Bars
These bars would be a perfect treat for any Christmas gathering. They're easy to make and contain protein, healthy fats and are gluten & refined sugar free. Special thanks to our talented friend Brianna for this tasty recipe!
🖤 Chocolate Coconut Cashew Bars 🖤
Ingredients:
Base:
- 1 1/2 cups raw unsalted cashews
- 1 cup rolled oats
- 1/4 cup coconut oil (melted)
- 1/4 maple syrup
Topping:
- 1/4 maple syrup
- 1/4 coconut oil (melted)
- 1/2 cocoa powder
- 2 tsp coconut flakes (for sprinkling)
Directions:
1. Combine base ingredients in food processor and blend until a ball forms.
2. Press into loaf pan lined with parchment paper.
3. Combine topping ingredients in bowl and whisk until smooth.
4. Pour topping over base & sprinkle with coconut flakes.
5. Place in freezer to set before cutting into small squares.
