Chocolate Carrot Cake Breakfast Bars

🖤 Chocolate Carrot Cake Breakfast Bars 🖤

Ingredients:

  • 2 C mashed ripe bananas
  • 4 C rolled oats
  • 2/3 C unsweetened applesauce
  • 3/4 C water
  • 1/2 C mini vegan chocolate chips
  • 1/4 C coconut oil
  • 1/2 C pure maple syrup
  • 2 tsp pure vanilla extract
  • 1 1/2 tsp cinnamon
  • 1 1/2 C carrots, peeled and finely grated
  • *additional chocolate chips for topping, if desired

Instructions:
  1. Preheat oven to 350F and line a 9x13 baking dish with parchment paper.
  2. Mash the bananas with a fork until no lumps remain, and place in a large bowl. Add all other ingredients and mix well.
  3. Pour into lined baking dish, and smooth out the top. Sprinkle additional chocolate chips on top, if desired.
  4. Bake for 30 minutes, then turn off the oven. Keep your bars in the warm oven for 20 minutes before removing. 
  5. Cut into squares and serve!


This is a great recipe to make ahead for the week! Simply keep your bars refrigerated, or freeze any that you may not use in the next 4-5 days.
