Pumpkin Spice Cashew Cream Coffee + Mocha
Why not another pumpkin recipe for National Pumpkin Day (Oct 26)? We hope that you enjoy this specialty coffee that you can make right at home, for a fraction of the price (and sugar content) of a PSL!
Yields 2
• 2 Cups of brewed coffee, hot
• 1/4 Cup of raw cashews (30 cashews)
• 1/2 tsp of pure vanilla extract
• 2 Tbsp pure maple syrup
• 1/2 tsp pumpkin spice
*Mocha: Add 2 Tbsp cocoa powder*
1. Blend all ingredients in a high powered blender and voila! If you don't own a high powered blender, you may need to soak your cashews in hot water for at least an hour in advance before blending. Serve with a cinnamon stick for extra flavour!
