Raspberry White Chocolate Scones

🖤Raspberry White Chocolate Scones🖤
Ingredients:
- 2 cups + 2 tbsp all purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 3 Tbsp sugar
- 1/2 tsp salt
- 1/2 cup + 1 Tbsp unsalted butter, cold, cubed
- 1/2 cup +1 Tbsp buttermilk
- 1/2 cup fresh or frozen raspberries
- 1/2 white chocolate chips
- optional extra sugar, for finishing
Directions:
- Preheat oven to 375 F. Line two baking sheets with parchment paper.
- In a large bowl, whisk together flour, baking powder, baking soda, sugar and salt.
- Using a pasty cutter or two knives, cut the butter into the dry ingredients.You want your mixture to look quite dry.
- Make a well in the centre of the mixture and add in buttermilk, a little at a time, while incorporating with your hand. The mixture should feel slightly dry to ensure a flaky scone but you can add a few tablespoons of buttermilk to hold the dough together. ( I usually add 2-3 more tablespoons)
- Add the raspberries and white chocolate chips and gently incorporate. Gently roll dough onto a lightly floured surface until it is about 1 inch thick.
- Cut scones out of the dough using a large cookie cutter dipped in flour and place on the lined baking sheets. Sparkle with sugar if you wish.
- Bake for 25-30 minutes. Makes 8 large scones.
