Black Bean Brownies

We are so excited to be launching our new food blog! There's no better way to kick things off than our favourite brownie recipe: Black Bean Brownies! They are moist and chewy, and we can't decide if we like them better cold or hot out of the oven!

đź–¤BLACK BEAN BROWNIESđź–¤

Gluten free (*can be vegan & refined sugar free if you use appropriate chocolate chips*)

Ingredients
• 1 1/2 cups black beans (drained and rinsed)
• 2 tbsp cocoa powder
• 1/2 cup quick oats
• 1/4 tsp salt
• 1/2 cup pure maple syrup (OR honey)
• 1/4 cup coconut oil (OR vegetable oil)
• 2 tsp pure vanilla extract
• 1/2 tsp baking powder
• 1/2 cup to 2/3 cup chocolate chips
• more chocolate chips on top (optional)

Instructions:
1. Preheat oven to 350 F.
2. Combine all ingredients except chocolate chips in a food processor, and blend until completely smooth. (A blender can work but the texture—and even the taste—will be much better in a food processor.)
3. Stir in the chips, then pour into a greased Loaf Pan.
4. Optional: sprinkle extra chocolate chips on the top.
5. Cook for 16 minutes, then let cool at least 10 minutes before trying to cut. If they still look a bit undercooked, you can place them in the fridge overnight and they will firm up! (Recommended if you can wait that long. These brownies are amazing hot but taste even better cold).
6. Makes 8-10 servings.

Topping: Chocolate Sauce Frosting (optional)

• 2 tbsp coconut oil
• 2 tbsp maple syrup
• 2 tbsp cocoa powder

1. Heat coconut oil (and maple syrup if it’s cold) in microwave.
2. Add cocoa powder & stir until a thick sauce forms. Use as a “healthier” icing for treats or just eat it with a spoon (seriously, it’s that good!).
