BEST VEGAN BROCCOLI SOUP

Growing up, my friend's mom made the BEST broccoli soup. I always wanted to try to create a soup that rivaled hers, and quite honestly, I think this one is better! Plus, it's vegan!

🖤BEST VEGAN BROCCOLI SOUP🖤

Serves 6

Ingredients:
  • 2 medium yellow onions, chopped coarsely
  • 1 tsp ground thyme
  • 1 tsp smoked paprika
  • 4 cups broccoli florets
  • 5 cups vegetable stock
  • 3 Tbsp nutritional yeast
  • 1 Tbsp lemon juice
  • Salt and pepper to taste 
Directions:
  1. Place chopped onions in a large saucepan and sautée over medium heat for ten minutes. Add water 1 to 2 Tbsp at a time to keep onions from sticking to the bottom of the pan. Add the ground thyme and smoked paprika, stir, and cook for another minute, adding another tablespoon of water if necessary. Add the broccoli, vegetable stock, nutritional yeast and lemon juice. Bring to a boil over high heat, reduce the heat to medium, and cook, covered for 10 minutes or until the broccoli is tender.
  2. Puree using an immersion blender or carefully transfer in batches to a blender with a tightly-fitted lid, covered with a towel. Return the soup to the saucepan and season with salt and pepper.
  3. Serve in bowls and mix with desired amount of cashew cheese sauce (optional). *Non-vegan option to top soup with grated cheese before serving.
